Digestion is the
breakdown of complex food substances into simple and absorbable form by the aid
of enzymes using a process known as hydrolysis. Carbohydrate basically are
divided into three: Polysaccharides (example Starch), Disaccharides (Sucrose
and Lactose), and monosaccharides (Fructose, Galatose and Glucose). Almost all
the carbohydrates of the diet are either large polysaccharides or disaccharides,
which are combinations of monosaccharides
bound to one another by condensation
(Guyton and Hall, 2006). When ingested, these carbohydrates undergo a
reaction hydrolysis, a reaction catalyzed by different enzymes within different
parts or division of the gastro intestinal tracts. The next process after
digestion is absorption.
